I'm sure most of you have been watching the Great British Bake Off and I don't know about you but I was feeling rather tense watching caramel week!! So if you fancy a yummy caramel recipe without the stress of burning sugar then why not get the kids and give this yummy recipe a go!! For the more adventurous I have put a caramel recipe for you to make instead of the cheats version!
Banana & Caramel Cupcakes
What you'll need..

60g butter
30g light brown sugar
20g sugar
1 egg
1/4 tsp vanilla extract
100g self raising flour
1 ripe banana
6 tsps Carnation Caramel
Put the butter & sugars into your bowl and cream together until nice and fluffy
Gently beat in the egg and vanilla extract until combined and then fold in the flour and mix until smooth
Squash the banana and add to the mixture and mix well
Put your cupcake cases in your tins and put one spoon of mixture into each case
Now add a tsp of caramel on top of the mixture in each case and then cover it up with the remainder of the mixture.
Pop in the oven for 20 minutes at 180c until risen and golden
So for those of you who fancy making your own caramel here is the recipe:
What you'll need:
200g Sugar
100g butter
50ml cream or milk
On a medium heat put the sugar with 4 tbsp of water into a pan leave the sugar to melt, don't stir this otherwise it will crystallize and make the caramel grainy and try not to let the mixture go up the pan.
Once the sugar has dissolved turn up the heat and bubble for 3-4 minutes until you have caramel.
Take off the heat and carefully stir in the butter and cream.
Leave to cool and your caramel is ready to use!
