Recipe of the week...

We made these delicious muffins in the summer holiday clubs and they were yummy!! I was recently asked to share this recipe so it had to be the recipe of the week! I’d love to see your pics of the muffins so please post them on my Facebook page 😊 https://m.facebook.com/childrenscookeryclasses/

What you’ll need:


150g self raising flour


25g butter


40g sugar


1 egg


150ml milk


1/4 tsp almond extract


25g desiccated coconut 


6 tsps strawberry jam 

How to make it:


Preheat the oven to 180c


chop the butter into cubes in a large mixing bowl and using your fingers rub together with the flour until it looks like breadcrumbs 


stir in the sugar, egg, milk, almond extract & almond extract and mix until well combined


put the muffin cases in the tin and put 1 spoon of mixture in each of the cases


now add 1 tsp of jam on top of the mixture and then cover the jam with the remaining mixture in the bowl


pop in the oven for about 20 mins until risen & golden 


once cooled decorate with thick icing and a cherry on top!
