It's National Salami Day today!! Who knew??
Salami is one of those things that is a little bit naughty but so delicious on a pizza or with pasta. It is something my kids will happily tuck into! I wanted to share with you my yummy recipe which is a bit of a pizza twist using chicken breast...yum!
Chicken Topped Salami & Cheese, serves 4
What you'll need:
4 chicken breasts
1 pack of salami
Grated cheddar or mozarella
Tomato puree
Oregano & basil
First of all, lay the chicken breasts on a board and flatten with a rolling pin
Spray a frying pan with fry light or a little olive oil, on a medium heat cook the chicken for approx 20 minutes, turning occasionally until cooked through and the juices are running clear
Lay the cooked chicken on a grill pan and spread the tomato puree over the top of each one, sprinkle the basil & oregano and then add the sliced salami on top of the chicken and sprinkle with the cheese.
Cook under the grill for a few minutes until the cheese has melted and slightly browned.
If you are wondering what to have with it, then why not cut up some sweet potatoes into wedges, spray with fry light or olive oil and season with salt and pepper. Pop these in the oven for approx 30-40 minutes until cooked through and slightly crispy. Just remember to pop these in to the oven before you start the chicken!
Garnish with a side salad and your favourite salad dressing!
